Mushroom Soup ...... Slurp it up


Anytime, anywhere, mushroom soup is a crowd favourite.
IF chicken soup is good for nourishing the soul, there is more to be said for mushroom soup.

Whenever there is a need to organise an event where Continental cuisine is the order of the day, then there is no toss as everyone votes the mushroom soup in over everything else.

Far from the common serving of soup in soup plates and bowls, many establishments have also taken to giving the mushroom soup a much more elevated style of serving.

At several food outlets, the mushroom soup is served in a hollowed-out bread and the soup is thickened when one scrapes the leftover bread together while scooping the flavourful broth.

In many good hotels, the soup is kept warm with a piece of puff pastry baked over the receptacle used to serve this international favourite!
Any which way it is served, it is the end-result of the soup that matters.
It must have body, aroma and balance in flavour.

If making it at home, ensure that the blender you use to blend the soup is clean and not used for blending local herbs and spices that are strong in flavour as this may go into the soup and leave it tasting peculiar.

Some of the best mushroom soups are not made of a single variety of mushroom but have about three and up to five or six varieties in them.
Button mushrooms are the top favourite but mixed with a portobello or two (not too much or you get a heady taste which may not be agreeable to most) and you get a delightful bowl of wild mushroom soup.

There is a meaty flavour to mushroom and if you are a vegetarian, then this is the closest you will get to having meat on your plate.
A good mushroom soup is pleasantly thick and substantial and gives an appealing aroma when it arrives at the table.

One of the things one must do to savour the soup is to allow it to sit for a minute or two when it arrives and then stir it if you get it in a soup plate or bowl and slowly slurp it up. In a cup, sip it slowly and let it roll in your mouth for a bit to taste the mushrooms.

For those that are served with a puff pastry on top of the bowl or cup, then the best way is to cut through the pastry in the centre with your spoon and to let it fall into the soup and eat it slowly. Careful, though, the mushroom soup served this way has spent a little time in the oven when the pastry was being baked and this makes the soup piping hot!

Personal favourites where this soup is delectable are the Shangri-la Hotel at the Lafite in Kuala Lumpur, which serves an authentic, rich and very addictive version.

The Villa Danielli at the Sheraton Imperial Hotel down the road also serves a remarkable mushroom soup, though the serving is pretty small, it is a good one and thoroughly enjoyable.

At the Micasa Hotel, the soup used to be served in a hollowed out bread and though it has been some years since the writer has been there, the taste of their mushroom soup still lingers in her memory as it was a good, original starter that has won compliments every time a meal was had there.

One of the other good places in the capital city to have mushroom soup is at The Loaf at The Pavilion. Good, robust and nourishing broth served in a hollowed out bread, too. Though a tad pricey, it is worth every sen of your money!
In the north, the Food Loft at Gurney Plaza serves an authentic soup that can rival that of some outlets in Kuala Lumpur, while The Manila’s Place at the Tesco’s in Ipoh also whips up a great eat.

Down south, the Capri Continental restaurant at Mutiara Hotel Johor Baru serves quite a good version of mushroom soup that complements its steaks and main meals well.
